Ho Ho! I wonder if Santa would like these wholewheat gingerbread apple waffles instead of cookies this year. These wholewheat gingerbread and apple waffles will leave your house smelling delicious, even Santa won’t be able to resist.
I am all about meal planning, especially when it comes to Christmas. These waffles can be made ahead, stored in the freezer and pop them in the toaster Christmas morning, which means more time sipping coffee and baileys and snuggling up to those you love. I made an apple compote which takes very little effort and tastes amazing but I think pomegranates also would be nice and festive.

Ingredients
- 2 cups of wholewheat flour
- 2 tbsp brown sugar
- 1 tbsp hemp hearts
- 1 tsp cinnamon
- 1 tsp ground ginger
- 1/2 tsp nutmeg
- 1/2 tsp all spice
- 1/4 tsp cloves
- 1 tsp baking powder
- 1/2 tsp baking soda
- pinch of salt
- 3 tbsp melted butter
- 1 tsp vanilla
- 3/4 cup of apple sauce
- 1/2 cup of yogurt
- 1/2 cup of milk
- 2 eggs, separated
- 1 apple ( granny smith)
- 1 tsp coconut oil
- 1 tsp cinnamon
Instructions
- Pre heat Waffle maker
- In a large bowl, whisk together all dry ingredients.
- In a medium bowl, beat egg whites with hand mixer until stiff.
- In a small bowl, whisk wet ingredients including egg yolks and combine with dry ingredients. Fold in egg whites.
- Spray waffle iron. Add batter to waffle iron and cook until golden brown. Serve immediately or keep warm in a 200 degree oven. For leftover waffles store in a freezer bag.
- Apple Compote:
- In a medium frying pan, over medium heat melt coconut oil, add apples and cinnamon. Cook until softened.
- Top waffles with plain greek yogurt, apple compote and maple syrup.
