Whole Wheat Apple Spice Waffles

We like to make waffles or pancakes on the weekends.  The girls and I went apple picking a couple of weeks ago. We are on a bit of an apple kick to eat them before they go bad.  These apple spice waffles are made with homemade apple sauce, spices, and topped apple compote make a perfect breakfast.

 

 

Whole Wheat Apple Spice Waffles

  • 2 cups wholewheat flour
  • 2 tbsp sugar
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 eggs beaten
  • 2 tbsp coconut oil
  • 1 tsp vanilla
  • 1 cup apple sauce

apple compote

  • 2 apples chopped
  • 1 tbsp coconut oil
  • 1 tsp cinnamon
  • 1/2 tsp ginger, ground
  • 1/4 cup walnuts, chopped
  1. Preheat waffle maker.

    In a large bowl, whisk all dry ingredients.

    In a medium bowl, combine eggs, vanilla, applesauce, milk, and coconut oil.

    Add wet ingreidents to dry ingredients and mix until well combined but do not over mix.

    Spray waffle iron with small amount of vegetable oil. Add waffle mixture to waffle iron.

    In a small pot, melt coconut oil, add apples, cinnamon, and ginger. Cook until apples have softened 5-7 minutes.

    Serve waffles with apple compote.

I am always looking for ways to make things healthier. I made these waffles with whole wheat flour, homemade applesauce, and added some hemp hearts for extra fiber and protein. As a treat, I will make this vegan coconut cream from minimalist baker but this could easily be substituted with plain yogurt. I also like to make extra waffles and freeze them for those busy chaotic mornings.
