Vanilla Peach Popsicles

Summer has finally arrived here on the West Coast! It’s been pretty hot the past couple of weeks. To beat the heat we have been making vanilla peach popsicles. I love the sweet taste of a juicy Okangan peach. We are so lucky here on the West coast to have an abundance of seasonal fruit and vegetables at our finger tips. As a dietitian mom, I am always looking for a healthier option when it comes to feeding the girls. These creamy vanilla peach popsicles are made with fresh seasonal peaches, taste amazing, super easy to make and are a perfect summer treat on a hot day.

Popsicles are one of those timeless summertime treats. Most summer treats are loaded with sugar and unwanted ingredients that I prefer to limit in our house. I made these popsicles with fresh peaches from the Okanagan but you could easily use frozen.  We added homemade granola to some but you could leave it out. With these hot summer days their is no way I am turning on the oven to make our regular baked oats. Instead we have breakfast in the form of a popsicle with homemade granola and fresh peach slices. Best mom bonus points, just saying. Pretty sure any kid (big ones too) would eat these vanilla peach popsicles popsicles for breakfast or anytime for the record. If peaches are not your thing try these homemade roasted strawberry popsicles.

Vanilla Peach Popsicle

  • 2 cups peaches, fresh or frozen
  • 1 tbsp honey or maple syrup
  • 1 lime juice
  • 1/2 cup vanilla yogurt
  • 1/2 cup greek yogurt
  1. Blend peaches, honey and lime juice.

    Fill popsicle mould 1/2 full and place in freezer for 15 minutes.

    Combine vanilla and plain yogurt. Mix well.

    Add yogurt to the popsicle mould and top with granola.

    Freeze for 4 hours.
