Homemade Turkey Soup

I love making homemade turkey soup after Thanksgiving and Christmas dinner.  There is something about turkey sandwiches and homemade turkey soup. There really is nothing more comforting than a hearty bowl of homemade turkey soup after a day on the slopes or playing in the snow!

While it takes time to make this homemade turkey soup, its worth every minute and pretty easy to make. You can make your own broth and freeze the leftover broth for other soups or recipes, reducing food waste and food cost. I like to add celery, carrots, barley, and a bit of pasta for the girls, which is optional. You can add frozen peas and corn if you like, really the sky is the limit. I like to also add fresh thyme for extra flavour.

Making your own broth:

To make your own broth remove as much meat from the carcass as possible. In a large pot, place turkey carcass in pot and fill it with water. Add 1/2 an onion,  2 chopped celery ribs, 2 carrots chopped, and 3 bay leaves. Allow the carcass to simmer for a few hours. Strain through a colander into a large bowl. Making your own broth adds so much flavour.

  • 2 tbsp olive oil
  • 4 stalks of celery, chopped
  • 5 large carrots, chopped
  • 2 garlic cloves, crushed
  • 2 bay leaves
  • 2 litres of broth
  • 3 cups turkey, diced
  • 4 thyme springs
  • 1/4 cup barley
  • 3/4 cup pasta, cooked
  • salt and pepper to taste
  1. If you are making your own broth make it first.

    In a large pot, heat olive oil over medium heat. Add celery and cook until transparent, about 5-8 minutes. Add garlic and cook for another minute. Add carrots and cook until soft.

    Add bay leaves, turkey, broth, thyme and salt and pepper. Bring to a boil. Add barley. Simmer over medium/low heat for about 45 minutes.

    While soup is simmering. Cook your pasta. Add pasta to soup. Remove bay leaves.

    Season with salt and pepper.
