Healthy whole wheat flax seed waffles !

Waffles are a weekend favorite in our house. Topped with fresh fruit, yogurt and maple syrup, I mean who could resist. I am always experimenting with ingredients, trying to make favorite recipes a bit healthier. These wholewheat waffles are made with ground flax to boost their nutritional value without compromising taste. With Mother’s day right around the corner, why not surprise mom with these healthy whole wheat flax seed waffles.

 

Whole Wheat waffles with flaxsmeal

Delicious and healthy wholewheat waffles!

  • 1 1/2 cups wholewheat flour
  • 1/2 cup flaxsmeal
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 2 tbsp sugar
  • 1 pinch salt
  • 1 tsp vanilla
  • 2 eggs, separated
  • 1 1/4 cup buttermilk
  • 3 tbsp coconut oil
  1. Preheat waffle iron according to directions.

    In a large bowl, whisk together dry ingredients.

    In a medium bowl, combine wet ingredients including egg yolks.

    In a small bowl, beat egg whites using an electric hand beater and fold into wet ingredients.

    Add wet ingredients to dry ingredients. Be careful not to over mix.

    Spray waffle iron with cooking oil spray. Add waffle mix to waffle iron and cook according to waffle iron.

To make buttermilk combine 1 cup of milk and 1 tbsp of vinegar or lemon juice. Allow to sit at room temperature for 20 minutes. 

 

Benefits of Flaxseed:

Flax seeds come from a tiny plant and offer many nutritional benefits such as fiber, omega three fatty acids, phytochemicals, protein, magnesium, potassuim, as well as small amounts of zinc, iron and folate.

A little goes a long way, 1 tablespoon of ground flaxseed provides 1.6 grams of omega 3 fatty acids which meets your omega 3 fatty acid needs for the day. Now that’s pretty impressive.

Flax seeds are much easier to digest when they are ground, making it easier to obtain the nutritional benefits. Ground flax seed should be stored in air tight containers in the fridge or freezer to prevent oxidation. They can be stored for up to 6 months.

I like adding plain greek yogurt or this vegan coconut whip cream from minimalist baker ( if it’s someones birthday) with fresh berries and a touch of maple syrup. You can add any fruit and if you are dairy free use coconut yogurt instead.

I always make extra waffles and freeze them for mid week breakfast options, simply put them in the toaster. Mother’s day is right around the corner and these waffles would make a great breakfast for mom.
