Delicious, healthy and easy to make. This chia seed pudding is made with local apples and pears which taste amazing this time of the year. Once fall hits, we are eating our weight in apples and pears. We always try to eat in season and local whenever possible. If you love chia seeds you need to make this apple, pear, chia seed pudding.

My girls love Chia seed pudding and I love chia seed pudding because it offers a good nutritional punch without compromising taste. Chia seed pudding can be enjoyed for breakfast, dessert, and/or a healthy snack. Chia seeds are rich in fibre, omega-3 fatty acids, and protein. We had some apples and pears that we starting to soften, instead of wasting them we decided to make an apple pear sauce.   This recipe uses coconut milk but you could substitute for another plant based milk such as almond if you like. We added an apple and pear sauce to the chia seed pudding and topped it with apples and pears that were sauteed in coconut oil, cinnamon, and a touch of maple syrup.

Apple, pear chia seed pudding

Delicious, easy to make, and healthy fall dessert.

  • 2 cups coconut milk
  • 1 tbsp maple syrup
  • 1 tsp vanilla
  • 1/4 cup chis seeds ( I used black)
  • 1 cup apple/pear puree
  • 1 apple chopped into 1 inch slices with peel
  • 1 pear chopped into 1 inch slices with peel
  • 1 tbsp coconut il
  • 1 tsp cinnamon
  • 1/4 tsp ginger, ground
  1. In a medium bowl, whisk together coconut milk, maplesyrup, and vanilla.

    Add Chia seeds and stir until well cmbined. Place in fridge for 2-4 hors or overnight.

    Steam apple, pear,and cinnamon until soft. Add to bekder and puree.

    Slice remainder apple and pear into 1/2 inch cubes.

    Heat coconut oil, add pears and apples. cinnamon and cook over medium heat, for 5-10 minutes until soften. Add a touch of maple syrup.

    Add chia pudding to a cup, add apple/pear sauce and top with chia pudding. Top pudding with cooked apple and pears.
