Easy Pumpkin loaf

If you love pumpkin, you have to make this easy pumpkin loaf. This loaf is perfect balance of pumpkin and spices paired with a cup of tea on a dreary fall days.

This pumpkin loaf is super easy to make, perfectly spiced, and made with real pumpkin ( read the label on the can). I have been making this for school lunches and the girls love it. I used whole flour but you can substitute all purpose flour, you can also add pumpkin seeds and/ or fold in 1/2 cup of chocolate chips.

 

Health Benefits of Pumpkin:

Pumpkin is a good source of fibre, vitamins A, C, folate and minerals potassium and phosphorus.

Ingredients

  • 1 1/2 cups of whole wheat flour ( you can use all purpose)
  • 1 tsp cinnamon
  • 1 tsp pumpkin spice
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup of pure pumpkin
  • 1/2 cup of milk
  • 1/2 cup of brown sugar
  • 1/4 cup of vegetable oil
  • 2 large eggs, beaten
  • 1 tsp vanilla

Instructions

  1. Preheat the oven too 350 degrees and line a 8 x 4 baking pan with parchment paper
  2. In a medium bowl, combine flour, baking powder, baking soda, spices, and salt
  3. In a large bowl, whisk together milk, pumpkin, sugar, eggs, oil, and vanilla.
  4. Add dry ingredients to the wet ingredients and combine. Do not over mix. Pour batter into the baking pan and bake for 40-45 minutes until top is golden brown and tooth pick check comes out clean. Allow loaf to cool in pan for approximately 2-3 minutes. Allow loaf to completely cool before slicing.
