Rudolph Sugar Cookies

Do you have any family Christmas traditions? I like blasting the Christmas music and getting the girls in the kitchen to bake Christmas cookies, I am hoping we will create some family lasting memories and recipes that will be passed onto their families. These cookies are so easy to make, simply take a gingerbread cookie cutter, flip them upside down and decorate.  It’s that easy. I wish I could take the credit but Mr. D found the idea in the local paper. The girls helped bake and decorate the cookies.  We made a couple dozen of these Rudolph sugar cookies for a few neighbours, they were a hit. I hope Santa enjoys these as much as the girls did.

 

We decorated these cookies with a simple chocolate icing to keep it kid friendly, but if you want to get more creative you could always ice them with royal icing. We also played around with a few designs with the eyes and different coloured noses.  I don’t think you could go wrong either way. I say have fun and see what you can come up with.

Rudolph Sugar Cookies

Yields 24

Ingredients

  • 2 cups of all purpose flour, plus more for rolling
  • 1 tsp baking powder
  • 3/4 cup of sugar
  • 1/2 cup of unsalted butter, room temperature
  • 1 large egg
  • 1 tsp vanilla extract
  • Icing
  • 1/2 cup chopped chocolate, I used 70%
  • red chocolate m&m's ,

Instructions

  1. In a large bowl, whisk flour, baking powder and set aside.
  2. Cream butter and sugar together until fluffy.
  3. Beat in egg and vanilla.
  4. Slowly add dry flour mix and mix on low speed and combined.
  5. Wrap dough in plastic wrap and store in fridge for at least an hour preferably overnight.
  6. Preheat oven to 350 degrees
  7. Line 2 baking sheets with parchment paper
  8. Using a rolling pin, roll out dough to 1/4 inch thickness.
  9. Using a gingerbread cookie cutter cut into gingerbread men and bake for approximately 10- 12 minutes or until lightly brown.
  10. Chocolate Icing
  11. In a double boiler, add coconut oil and 1/2 chocolate cook until chocolate melted. Add the other half of the chocolate and stir with a spoon until all chocolate has melted. Once chocolate has cooled a bit place into a piping bag or plastic bag. Outline cookies with chocolate and decorate with red m& m's for the nose.

Notes

Decorate cookies with a variety of different eyes, we used white chocolate chips and variety of coloured noses. Have fun.
