Happy December! How are you my friends? I hope you are all enjoying this festive season. We just hosted our first Christmas party since the pandemic, it was so nice to entertain again. I really wanted to bake something fun and delicious for the kids. These  adorable double chocolate Rudolph cupcakes were a hit with the kids. Not only are these double chocolate cupcakes delicious and cute but they are incredibly easy to make. If you need an easy recipe to make that will impress your guests I encourage you to try this recipe.

 

Double chocolate Rudolph Cupcakes

Ingredients

  • 1 cup of all purpose flour
  • 3/4 cup of sugar
  • 1/2 cup of unsweetened cocoa powder
  • 1 tsp baking soda
  • pinch of salt
  • 1 egg
  • 1/2 cup of milk
  • 1/4 cup of butter, melted
  • 1 tsp vanilla
  • 1 tsp espresso powder in 1/2 cup of hot water
  • 24 mini pretzels
  • 24 sugar eyes
  • 12 red m & m's
  • CHOCOLATE FROSTING:
  • 1/2 cup of softened, unsalted butter
  • 1/4 cup of cocoa powder, sifted
  • 2 cups powdered sugar, sifted
  • 1 tsp vanilla
  • 1 tbsp milk

Instructions

  1. Preheat oven to 350 degrees. Prepare muffin tins with paper liner
  2. In a large bowl with a hand mixer, mix all dry ingredients. Add egg, milk, butter, vanilla, and espresso.
  3. Fill each muffin tin 3/4 full.
  4. Bake 20-24 minutes. Check for doness with toothpick. If toothpick comes out clean the cupcakes are done.
  5. Place cupcakes on a cooling rack and cool completely before icing.
  6. Frossting:
  7. In a large bowl with a hand mixer whip butter, and cocoa powder. Add powder sugar and vanilla whip until smooth. Add milk and whip again until smooth
  8. Place frosting on cupcakes. Add pretzel ears, eyes and nose.

We are big Rudolf fans, in fact, the Rudolf movie is one of my favorite classic Christmas movies.  Miss E requested Rudolf cupcakes on her third birthday, even though her birthday is in the Spring. We make these Rudolf sugar cookies every year, they are so adorable and east to make too.  Do you bake with your kids?  If you are looking for ways to get kids away from screens I encourage getting them in the kitchen. You don’t need any fancy icing or art skills to make these Rudolf cupcakes.  Crank up the Christmas music and have some fun.
