Good morning friends! We have an amazing breakfast recipe to start off your day on the right foot. Orange citrus chia seed pudding. We love Chia seed pudding. I mean what’s not to love… it’s super easy to make, tastes amazing and is super healthy.  It reminds me of when my mom used to make rice pudding but a healthier version.  With spring on the horison I am looking forward to recipes that remind me of  warmer spring days. This citrus orange chia seed pudding is like a fresh bowl of sunshine on a spring day.

As a registered dietitian, I am always looking for healthy breakfast ideas to keep us going all morning long. Did you know that 2 tbsp of chia seeds provide 11 grams of fibre, 4 grams of protein and 5 grams of healthy essential fats. Most people think of chia seed pudding as breakfast but this orange citrus chia seed pudding is so refreshing that you could really eat it any time of the day.

I am all about eating seasonal foods, not only are they delicious but seasonally produce is less expensive. We have been enjoying a variety of ranges such as, naval, cara cara and blood oranges. Oranges are a source of vitamins and minerals such as folate, thiamine, potassium, calcium and fibre. Did you know you can meet a 100% of your vitamin C with 1 orange helping us maintain a healthy immune system. Oranges have many health benefits such as antioxidant and phytochemicals  to protect us against heart disease, certain cancers like pancreatic, colon, and lung cancer. Additionally, eating oranges regularly can help ward off aging diseases such as macular degeneration and Alzheimers.

In this citrus orange chia seed pudding we used orange zest and topped it with homemade granola and slices of oranges. This chia seed pudding makes a great breakfast or mid afternoon snack.

Citrus orange chia seed pudding

  • 2 cups coconut milk
  • 1 tsp vanilla, extract
  • 1 tbsp orange zest
  • 2 tbsp maple syrup
  • 1/4 cup chia seed
  • 1/2 cup homemade granola
  • 1/2 cup orange slices
  1. In a medium bowl, combine coconut milk, vanilla, maple syrup, orange zest, and chia seeds.

    Stir ingredients until well combined.

    Place in fridge for at least 2 hours. Stirring a few times to ensure all ingredients are combined.

    Place chia pudding in bowls/cups. Top with granola and fresh orange slices.
