Spring is finally here. To celebrate we decided to make this delicious strawberry banana smoothie with homemade coconut milk. My girls love smoothies, if they were in charge of meal planning we would be having smoothies for breakfast, lunch and dinner. I am not joking. This strawberry banana smoothie with homemade coconut milk is so easy to make, throw the ingredients in the blender and voila. What a perfect afternoon snack.
Smoothies are great a way to get extra fruit and vegetables into your diet. I like to add a variety ingredients such as vegetables, fruit, yogurt, hemp hearts, flax seed, chia seeds, oats, nut butters, protein powder, and of milk (of your choice). We decided to keep this strawberry banana smoothie with homemade coconut milk simple as it was more of an afternoon snack instead of a meal. My girls prefer fruit smoothies and being the dietitian that I am, I added hemp hearts for a little protein and fibre but you could easily substitute oats, chia seeds, or flax seed, really you can’t go wrong when it comes to smoothies.
To be honest, we don’t use a lot of coconut milk because its hard to find pure coconut milk. Even the organic brands contain thickening agents. No thanks. My dear friend Sarah from Mish Mash of Loves posted a recipe for homemade coconut milk. Guess what, it’s super easy to make and contains only two ingredients. It was so easy, Miss E rolled up her sleeves and helped make the milk and smoothie. I love her enthusiasm in the kitchen.

Ingredients
- 1 cup of frozen strawberries
- 1 frozen banana
- 3/4 cup of homemade coconut milk
- 1 tbsp of hemp hearts (optional)
Instructions
- Place all ingredients in blender and blend until smooth.
