Watermelon is a perfect summer fruit, it is super hydrating, containing over 90 percent water. watermelon is also an excellent source of lycopene. Lycopene is a powerful antioxidant which plays a role in cancer prevention and cardiovascular health. Cucumbers add quite a nutrition punch to these popsicles, like watermelon, cucumbers are super hydrating, contain insoluble fiber and have anti-inflammatory properties for cardiovascular prevention, anti-aging and neurological impairment.
Ingredients
- 6 cups of diced watermelon
- 2 cups of chopped persian cucumbers
- 1/4 cup of crumbled feta cheese
- 1/4 cup of chopped mint
- 1 lime
- 2 tbsp olive oil
- 1 tbsp white wine vinegar
- juice of 1 lime
- 1 tsp honey
- salt to tate
Instructions
- Combine watermelon and cucumber in 1 large bowl
- In a small bowl, whisk olive oil, vinegar, lime juice, honey and salt.
- Toss watermelon and cucumber in dressing.
- Add feta and chopped mint to salad.
