Raspberry jam thumbprint cookies

Happy Holiday’s my friends!  Are you ready for the holidays or are you like myself  trying to wrap my brain around the fact that we are nearly 1 week from Christmas, While I have been quiet on here, I have been testing and retesting cookie recipes. These raspberry jam thumb print cookies turned out amazing with the right amount of buttery and sweetness filled with raspberry jam. I hope Santa and his reindeer like them as much we do!

 

 

 

These cookies are so easy to make, and are perfect activity to do with the kids on the Christmas break, plus they take less than an hour including a bit of a chill period. I love adding raspberry jam but you can make any substitution or use a combo.

 

 

 

 

 

 

 

 

 

 

 

 

Raspberry jam thumbprint cookies

Ingredients
  • 1 1/4 cup of all purpose flour
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, at room temperature
  • 1/2 cup + 2 tbsp of granulated sugar
  • 1 large egg
  • 1 tsp vanilla
  • 1/4 cup of raspberry jam
Directions
  • Step 1 In a medium bowl, whisk together four and salt.
  • Step 2 In a large bowl with a stand mixer or hand mixer cream butter for approx 1 minute. Add 1/2 cup of sugar and mix until light and fluffy. Scrape down sides of the bowl. Add egg and vanilla mix until combined.
  • Step 3 Add dry ingredients and mix on low until combined.
  • Step 4 Roll into 1 inch dough balls and roll in sugar.
  • Step 5 Place on a baking sheet with parchment paper, 2 inches apart.
  • Step 6 Use the round side of a 1/4 tsp or your thumb and place an indent.
  • Step 7 Preheat the oven to 350 degrees.
  • Step 8 Place in the fridge for 30 minutes.
  • Step 9 Add 1/4 tsp of jam to the center of each cookie.
  • Step 10 Bake for 10 -12 minutes until lightly golden brown.
  • Step 11 Remove from oven and let cookies cool on cooling rack.
