Miss E and I planted our first garden this year. We planted arugula, beets, lettuce, carrots, tomatoes, strawberries, and herbs. Arugula is one of my favorite greens. I love it in salads, pizza, pasta, and love making arugula pesto. The combination of pepper and lemon is absolutely delicious.
Pesto is so easy to make and it adds a whole in dimension to your favourite dish, exactly what I look for when it comes to cooking during the summer months. This lemon arugula pesto can be added to sandwiches, burgers, pasta, pizza, salad dressing, omelettes and my favourite salmon.
There are so many different ways to make pesto, you can use basil, kale, spinach, or arugula. Traditionally, pesto is made with pine nuts but I usually don’t have then readily available and substitute walnuts. I like to add a squeeze of fresh lemon juice followed by parmesan cheese. You can also makes batches of pesto and freeze them in ice cube trays or small containers.

Ingredients
- 3 cups of arugula
- 3 Large garlic coves, crushed
- 1/2 cup of olive oil
- 1/3 cup of walnuts
- 1/3 cup of parmesan cheese
- 1 lemon
- salt to taste
Instructions
- Place arugula, garlic, walnuts, lemon and parmesan cheese. Pulse until smooth. Add olive oil while processor is running until smooth. Add salt to taste if desired.
