These gluten and dairy free brownies are simply amazing. I made these brownies last week for my daughters first communion celebration and they were a hit. These gluten and dairy free brownies are rich and chocolatey to the point that you only need a small square to satisfy a sweet tooth. Perfect on their own but can be served with a scoop of vanilla ice cream and fresh berries.
Gluten and dairy free brownies
- 1/2 cup coconut oil
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 tsp vanilla
- 2 eggs, well beaten
- 1/2 cup gluten free all purpose flour
- 1/2 cup cocoa
- 1/4 cup dark chocolate chips
- 1/4 tsp baking powder
- 1/8 tsp salt
- 1/4 cup unsweetened shredded coconut
Preheat oven to 350 degrees.
Grease an 8 x 8 baking dish with parchment paper.
In a bowl whisk flour, baking powder, and salt together. Set aside.
In a medium pot, combine coconut oil, both sugars, and cocoa
In a large bowl, beat eggs (well), add vanilla and beat again. Add melted chocolate mixture and beat again. Add dry ingredients and mix until combined.
With a spatula pour into baking sheet and sprinkle chocolate chips and coconut on top.
Bake for 20-25 minutes until brownies have set. Remove from oven and allow brownies to cool on cooling rack.
I made these brownies with gluten free all purpose flour because a couple of guests have celiac disease but you could easily substitute all purpose flour. You could also add toasted walnuts and serve vanilla ice cream on the side. Now I am totally fine with a little indulgence here and there but if you prefer a brownie that is a little less sweet I suggest these beet brownies or these black bean brownies from fraiche nutrition look divine.
While these brownies require a extra prep time, its totally worth it. Why not treat mom Mother’s day with these amazing gluten and dairy free brownies. I mean what mom doesn’t love chocolate.
