If you love pumpkin, you have to make this easy pumpkin loaf. This loaf is perfect balance of pumpkin and spices paired with a cup of tea on a dreary fall days.
This pumpkin loaf is super easy to make, perfectly spiced, and made with real pumpkin ( read the label on the can). I have been making this for school lunches and the girls love it. I used whole flour but you can substitute all purpose flour, you can also add pumpkin seeds and/ or fold in 1/2 cup of chocolate chips.

Easy Pumpkin loaf
Ingredients
- 1 1/2 cups of whole wheat flour ( you can use all purpose)
- 1 tsp cinnamon
- 1 tsp pumpkin spice
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup of pure pumpkin
- 1/2 cup of milk
- 1/2 cup of brown sugar
- 1/4 cup of vegetable oil
- 2 large eggs, beaten
- 1 tsp vanilla
Instructions
- Preheat the oven too 350 degrees and line a 8 x 4 baking pan with parchment paper
- In a medium bowl, combine flour, baking powder, baking soda, spices, and salt
- In a large bowl, whisk together milk, pumpkin, sugar, eggs, oil, and vanilla.
- Add dry ingredients to the wet ingredients and combine. Do not over mix. Pour batter into the baking pan and bake for 40-45 minutes until top is golden brown and tooth pick check comes out clean. Allow loaf to cool in pan for approximately 2-3 minutes. Allow loaf to completely cool before slicing.
