Happy Summer friends! It has been a while since I have been here, as a busy working mom I have found it challenging to keep up at times, I am sure most of you can relate. Enough about me, I hope you are having a wonderful time soaking up family memories and enjoying the extra hours of daylight, we are trying to make the most of every minute. If you are like me, the last thing you want to do is turn on the oven during the record breaking heat waves, sure does seem like the norm these days. I have been making plenty of summer salads and this summer quinoa blueberry salad has become a regular at our dinner table. It really celebrates the summer flavours and takes little to no effort to bring together. If you need a salad to bring to a barbecue or are looking for some new inspiration give it a try and let us know what you think.
This salad is hearty and has a lot of summer flavour from fresh garden herbs, to summer sweet corn and fresh blueberries. I add chicken or salmon to this salad for extra protein, you could add chickpeas if you prefer to keep it vegetarian.
Ingredients for this salad:
mixed greens
quinoa
avocado
blueberries
corn
tomatoes
cucumber
dill
pumpkin seeds
feta cheese
olive oil
apple cider vinegar
dijon mustard
honey
salt and pepper
Ingredients
- 4 cups of mixed greens
- 1 cup of quinoa
- 1 avocado
- 1 cup of blueberries
- 1 cup of corn
- 1 cup of tomatoes, halved
- 1/2 cucumber, cut in quarters
- 1/2 cup of pumpkin seeds
- 1/4 cup of fresh, chopped dill
- 1/2 cup of feta cheese
- 1/4 cup of olive oil
- 2 tbsp red wine vinegar
- 1 tsp dijoin mustard
- 1 tsp honey
- salt and pepper
Instructions
- In a large bowl combine greens, quinoa, avocado, blueberries, corn, tomatoes, cucumber, dill, and pumpkin seeds.
- In a small jar, add add olive oil, vinegar, mustard, honey and salt and pepper.
- Toss salad with enough dressing to coat salad.
- Add crumbled feta cheese to top.
- serve right away.
