I met up with a couple of girlfriends last weekend. We were all servers back in the day and now we are all mothers. It felt great to get out even though all we talked about was our babies, shared pictures, and stories. We are all trying to figure out the work, life, and mommy balance. A common theme amongst women. After two kids I still haven’t figured it out. It’s tough, I often wonder how my girls will see me as a mother. At their young age , everyday household duties go unnoticed, I truly don’t think you can understand until you become a parent, I know I didn’t, but now realize my mom how hard my mom worked raising 4 kids. I hope they look back and know I loved them unconditionally. Challenging at times but by far the most rewarding job I have ever had. I feel so lucky to be their mama and watching them grow up makes me so proud. In honour of mother’s day I made these fluffy gluten free oat pancakes.
Luckily no one in our household has any food intolerances or allergies. We have a few friends who do an an intolerance to gluten. I like to have a few fool proof recipes for everyone to enjoy. These pancakes are adapted from Canadian living, they are fluffy, light, and oh so delicious. I think your mama would love these fluffy gluten free pancakes, but if your mom isn’t a pancake fan how about these wholewheat waffles or a picnic in the park with these salmon burgers, this roasted beet and carrot salad finished with these gluten free chocolate oatmeal cookies.

Ingredients
- 1 1/2 cups of gluten free oat flour
- 2 TBSP sugar
- 1/2 tsp baking soda
- pinch of salt
- 2 eggs, beaten
- 3/4 cup of plain yogurt
- 3 TBSP coconut oil, melted
- 1 tsp vanilla
Instructions
- In a large bowl, mix together flour, sugar, baking soda, and salt.
- In medium bowl, combine eggs, yogurt, oil, and vanilla.
- Combine dry and wet ingredients. Mix until combined
- Heat griddle or pan with vegetable spray over medium heat, pour pancakes and flip when bubbles appear, approximately 2-3 minutes.

Notes
You can easily make your own oat flour by pulsing oats a food processor until a fine powder.
